Lemongrass & Ginger Tea Smoked Chicken

Ingredients-:

  • You will need a bamboo steamer or metal steamer that fits on top of an oven proof casserole dish or pot and I would definitely recommend doing this on a BBQ burner if you can because it can get quite smokey.
  • 2 chicken breasts- chopped into about 4 pieces each
  • 1 stick lemongrass bruised and chopped finely
  • 1 x 2cm piece of ginger- chopped finely
  • Juice 1/2 lime
  • 1 teaspoon sesame oil
  • For smoking-
  • 1/4 cup Ginger Zing leaves
  • 1/2 cup raw brown rice
  • 3 tbsp brown sugar

Serves 2

Method-:

  1. Add the chopped chicken, ginger, lime, lemongrass and sesame oil to a bowl and toss together. Line the pot with alfoil and add smoking mixture to the centre, pop over med- high heat with steamer on top or lid until it starts to smoke. Line the bamboo steamer with baking paper and add chicken mix and cover with lid.
  2. Allow to smoke for about 20-30 mins turning the chicken after 15mins. You can also do this with salmon or fish fillets. I think steaming the chicken would work well here too, instead of the smoking mixture, just fill your bottom pot half full with boiling water and place steamer on top.
  3. Serve with brown rice and steamed greens.
