Ingredients-:
- You will need a bamboo steamer or metal steamer that fits on top of an oven proof casserole dish or pot and I would definitely recommend doing this on a BBQ burner if you can because it can get quite smokey.
- 2 chicken breasts- chopped into about 4 pieces each
- 1 stick lemongrass bruised and chopped finely
- 1 x 2cm piece of ginger- chopped finely
- Juice 1/2 lime
- 1 teaspoon sesame oil
- For smoking-
- 1/4 cup Ginger Zing leaves
- 1/2 cup raw brown rice
- 3 tbsp brown sugar

Method-:
- Add the chopped chicken, ginger, lime, lemongrass and sesame oil to a bowl and toss together. Line the pot with alfoil and add smoking mixture to the centre, pop over med- high heat with steamer on top or lid until it starts to smoke. Line the bamboo steamer with baking paper and add chicken mix and cover with lid.
- Allow to smoke for about 20-30 mins turning the chicken after 15mins. You can also do this with salmon or fish fillets. I think steaming the chicken would work well here too, instead of the smoking mixture, just fill your bottom pot half full with boiling water and place steamer on top.
- Serve with brown rice and steamed greens.
