Quinoa Salad

Ingredients:

  • 1 cup Quinoa, cooked (with Ginger Zing)
  • ½ cup Cucumber, chopped
  • ½ cup chickpeas
  • Handful of spinach leaves (or greens of your choice)
  • 2 Radishes- chopped finely
  • ½ Avocado
  • 2 tbsp pepitas, dry roasted
  • Dressing- Lemon, olive oil, salt and pepper infused with garlic clove

Method:

  1. Quinoa with Ginger Zing- Infuse 2 cups (440mls) of Ginger Zing; place into a saucepan with 1 cup of Quinoa; bring to the boil and then reduce to a low heat; cover with lid and cook for 20 minutes.
  2. Throw ingredients together into a bowl and enjoy!
