Ingredients:
- 1 cup Quinoa, cooked (with Ginger Zing)
- ½ cup Cucumber, chopped
- ½ cup chickpeas
- Handful of spinach leaves (or greens of your choice)
- 2 Radishes- chopped finely
- ½ Avocado
- 2 tbsp pepitas, dry roasted
- Dressing- Lemon, olive oil, salt and pepper infused with garlic clove
Method:
- Quinoa with Ginger Zing- Infuse 2 cups (440mls) of Ginger Zing; place into a saucepan with 1 cup of Quinoa; bring to the boil and then reduce to a low heat; cover with lid and cook for 20 minutes.
- Throw ingredients together into a bowl and enjoy!
